Vegetarian Potato Soup


!±8± Vegetarian Potato Soup

Traditional potato soup recipes often include bacon, sour cream and other animal products. For vegetarians and vegans who want a potato soup, this recipe is the answer. Children and adults will love this nutritious, satisfying soup.

3 med potatoes, peeled and diced

1 / 2 pound tofu

4 cups water (you can substitute a cup of water with vegetable broth)

1 medium onion, yellow, chopped

1 teaspoon salt

1 tablespoon olive oil

1 / 4 c. choppedParsley

black pepper

Directions:

Fill a pot with water and vegetable broth. Bring to a simmer and bring the water to cut the potatoes and onions in the dish. Add the sea salt. Simmer for about 20 minutes or until potatoes are tender.

While the potatoes and cook the onions, mix the tofu and olive oil in a food processor. When the potatoes and onions are done, add half of the lot in a blender with the tofu and olive oil andProcess.

The contents of the food processor into the pot with water and the other half of the potato / onion mix. Parsley and black pepper to taste. You could also add bacon or vegetarian bacon to the mix.

Simmer for a few minutes until hot enough to serve.
